Meatloaf Parmesan

Meatloaf Parmesan

Ingredients
  • 1 1/2 lbs lean ground beef
  • 2 eggs
  • 1 cup pizza sauce , divided
  • 1 small onion , grated (1/3 cup)
  • 1/3 cup Italian seasoned breadcrumbs
  • 1/3 cup parmesan cheese , grated
  • 1/4 cup fresh parsley , chopped
  • 3/4 cup mozzarella cheese , shredded

    Directions
    1. Preheat oven to 350 degrees F; line jelly roll pan with foil; coat with cooking spray.
    2. In bowl, mix beef, eggs, 1/2 cup pizza sauce, onion, breadcrumbs, Parmesan and parsley.
    3. Place mixture on pan; shape into 8x4 inch loaf.
    4. Bake until meat thermometer inserted into center registers 160 degrees F, about 55 minutes.
    5. Spread remaining pizza sauce over meatloaf; sprinkle with mozzarella.
    6. Bake until cheese is melted, about 5 minutes.
    7. Let stand 10 minutes before serving.

      Wow this is funny as this is one of my hubby's favorite meals in the world. lol  His mom used to make this only with her pasta sauce. Never thought of using pizza sauce. thanks it should make it easier to prepare now.

      Mmm! This is right up my alley! I sometimes use my meatball recipe and make an Italian meatloaf with that - with pasta on the side. I'll certainly try this recipe. Thanks for adding!
