No-Soak Black Bean Soup

I love black beans and this sounds really good.

No-Soak Black Bean Soup

INGREDIENTS

1 medium Onion chopped
1 medium Green pepper chopped
7 clove Garlic minced
1 pound Black beans uncooked, well rinsed
5 cup Water
3 cup Vegetable broth
7 ounce Green chili canned, diced
1 teaspoon Cumin
1 teaspoon Salt
1 teaspoon Thyme
1/2 teaspoon Black pepper
2 each Bay leaf

DIRECTIONS

Spray the inside of your crockpot with a cooking spray. Add the onion and pepper. Using a garlic press, add crushed garlic cloves directly into the pot. Add rinsed black beans, water, broth, chilies, cumin, thyme, salt, pepper, and bay leaves. Cover and cook on high for at least 8 hours.
