Pasta with Mushrooms, Beans and Corn
OK, that's a pathetic name for a recipe but that's what it is. I didn't have
everything to make the recipes I wanted to try, so I just winged it. I posted this over at Faceless Eating but thought you guys might like it as well
I know, it's obvious I'm not a food photographer but it's my first attempt. Also, I don't have "pretty" cookware and dishes. I have functional stuff so my pics will not be postcard pretty. However, I do hope they give you an idea of what I cooked and maybe you'll give it a try.

First I diced up a small, white onion and crushed a couple garlic cloves. I sauteed them in some olive oil for a bit, just to get them going. Then I added two boxes of fresh, sliced mushrooms. I sauteed all of this until tender.
Once it was all nice and tender I added crushed red
pepper and let it simmer a bit. Add crushed red pepper to taste. I ended up
adding quite a bit, but that's just me.
While this was simmering a bit I cooked up some fettucinni noodles. I cooked them al dente so they would not be mush.

While the pasta was cooking I took two cans of black beans and one can of corn and drained and rinsed them very well. Before adding them to the mushroom mixture I drained a bit of extra liquid from the mushroom mixture. After that I added the beans and corn to the mushroom mixture and mixed gently. I added some more crushed pepper and let the mixture cook on medium heat until nicely heated and mixed well.
When the pasta was done I drained it and sprayed it down with cool water to stop the cooking process. I put the pasta in a large bowl and tossed with olive oil and crushed red pepper. Once this was mixed well I added the mushroom mixture and mixed with the pasta. You might have to add a bit more olive oil but do this to taste and preference.
Once this was done I placed it in a casserole bowl and topped with fresh, quartered cherry tomatoes and more crushed red pepper. It might not be perfectly pretty but it tasted really good. It made a bunch. It filled up two casserole dishes.

You did good. Looks good, now if only I liked mushrooms I would try that LOL. I have a clear dish that looks like at one that was my Mother's. Then I have an amber one that my son gave me some serving pieces about 25 years ago.
