Cabbage Rolls

(Either you like them or you don't! When I make these the kids remove the cabbage and give it to me, but they love the rest of the recipe!)This is another very versatile recipe. You can make more or less, depending on how many you are feeding. I generally will double the recipe since leftovers of these are wonderful!!
1 1/2 Pounds Hamburger (turkey or sausage can be substituted or half and half)
2 teaspoons Salt
1/2 teaspoon Pepper
1 8 Ounce Can Tomato Sauce
1 Cup Cooked Rice
1/4 Cup Chopped Onion
1 Egg (beaten)1 Head of Cabbage
3-4 Sliced Carrots (Optional)Brown the burger. Add the rest of the above ingredients to the browned burger (except the cabbage)
In a separate pan...fill about half way with water and bring to a boil and add a pinch or 2 of salt. Slowly start adding cabbage leaves to the boiling water. Boil for a short amount of time. (Like a minute)
Place the sliced carrots to the bottom of a greased/buttered baking dish. Drain the cabbage leaves and start adding the meat mixture to the cabbage leaves. Roll each leaf like a burrito. Place each roll into a buttered baking dish on top of the sliced carrots (you don't need to use the carrots...it just adds more flavor) If you have any extra cabbage leaves, place them on top of the rolls.
Sauce:
2 8 Ounce Cans of Tomato Sauce
2 Tablespoons of Brown Sugar
1/4 Cup Water
1 Tablespoon of Lemon JuiceMix together the sauce ingredients. Pour over the top of the cabbage rolls.
Bake for about an hour at 350 degrees.
I like to make homemade mashed potatoes with butter when I make my cabbage rolls. A real German dinner!

Miss Linda, some day when making your rolls, try tomato soup instead of sauce.Works wonders.

we make ours the same. minus the egg.. I actually made this last week.. Hubby didnt eat it. But the kids love it!
