Linda is in the hosptial

Sad


This is Bo, Linda's husband.

She is in the hosptial right now.  She has become very sick, she had a massive brain hemmorage a bit over 2 weeks ago.

She will be in intensive care for at least a month or 2 more and then in rehab hosptial for quite a while after that.  The doctor wasn't sure if she was going to survive the intial attack of 2 1/2 weeks ago, but she has pulled though.

BBQ - Country Style Spare Ribs

One of my families favorite summer foods is BBQ'ed ribs. So I decided I would tell you how I make them. I am sure there are many different ways but this is mine.

 

  Barbecued Ribs

Country Style Pork Ribs (I prefer the boneless ones. You can also use Beef Ribs if you prefer. We just like the pork ones a lot better.)
Barbecue Sauce (I make my own but you can use what ever kind you like)

 

The day before I plan on making them I put them into a large pot of boiling water. Let them boil for about 30 minutes. (You want them to be cooked through). After they have boiled take them out of the water and place them in a large pan. Cover with BBQ sauce and refrigerate. Then until I am ready to BBQ them I will turn them over several times so that they get marinated in the sauce really well. The purpose of doing this is so that you don't have to worry about not cooking them completely when you grill them. Also, marinating them allows the BBQ sauce to get into the meat and makes them a lot more tasty and also a lot more tender.

The next day I turn the BBQ on and brush the entire grill with olive oil and once that is done I turn it on. I allow it to get really hot before putting the ribs on the grill. I then put them on the grill and watch them very closely, never leaving them alone. I turn them several times while they are cooking. Each time I turn them I use a brush and baste them. I usually will do this for about 20 minutes or so.

Remove them from the grill and take them to the table and enjoy! And make sure you have plenty of napkins on hand!

I usually make baked beans and my homemade potato salad to serve with my ribs. I will add the potato salad recipe in the next few weeks for you to enjoy this summer.

I always make extras since they are really good the next day also.

Fried Ravioli's

Would you like a fast and easy dinner that is also very delicious? Then you have to make this! One night I was messing around with some things that I had in the house. I knew that I didn't feel like making something that would take forever to make but I did want it to taste good. So, this is what I came up with. I hope you like it as much as my family does!

This recipe is one that all depends on how much you want to make or how many you are feeding. For sake of ease I will tell for the smaller amount and if you want to make more you just have to add more ingredients! How easy is that?  :-)

 

Fried Ravioli
From the Kitchen of Linda Snyder
 

1 Package of Frozen Cheese Ravioli's from your Grocers Freezer
Olive Oil
5-10 Fresh Mushrooms (Depends on how many you want or not...or maybe none...)
About 1/2 Cup chopped onion
2-3 Cloves of Garlic (or more if you love garlic)
About 1 Cup Shredded Parmesan Cheese

Add enough olive oil to the bottom of your frying bottom so that it barely covers it. Add the garlic and let sauté for a minute or 2 and then add the ravioli's.

Cook on low heat. After about 5 minutes add the mushrooms and onions. Stir often so that none of the ingredients burn. I usually will turn the burner down really low and cover it for a couple of minutes to ensure that the raviolis have cooked through.

Top with grated parmesan cheese and serve!

 

***I have also added green peppers to this but we prefer it without them. The kids don't like the mushrooms so I usually make 2 pans. One with and one without the mushrooms.

Homemade Chocolate Cake and Frosting

My Chocolate Cake and Frosting
From the Kitchen of Linda Snyder
 

3 Cups Flour
2 Cup Sugar
6 Tablespoons Baking Cocoa
1 Teaspoon Baking Soda
1 Teaspoon Salt
12 Tablespoons Vegetable Oil
2 Tablespoon Vinegar
2 Teaspoon Vanilla
2 Cup Cold Water

Mix ALL of the ingredients together. Do NOT overly mix. Pour into a un-greased 9 x 13" baking dish. Bake for about 30-35 minutes at 350 degrees.
(Insert a toothpick and if it comes out clean then the cake is done.)
Frost as soon as it has cooled for a bit.

Chocolate Frosting
From the Kitchen of Linda Snyder

 

1/3 Cup Softened Butter  (Margarine can be used also but better with the real thing!)
3 Cups Powdered Sugar
1 1/2 Teaspoons Vanilla
1/2 Cup Baking Cocoa
About 2 Tablespoons Milk

(If you prefer white frosting instead of chocolate then don't add the baking cocoa)

Mix the butter and sugar. Add the vanilla and milk. Mix it until the frosting is smooth or the right consistency to frost with. If too think you can add a couple of DROPS of milk at a time. But be careful...too much will make it too thin.

Some of you may have seen a recipe like this one out there. There are many variations of it. But this is the one that my Mom made when we were kids and I just have just continued on with the tradition and make it for my family.

It is a very heavy cake. But oh so good, specially still slightly warm with a scoop of vanilla ice cream on top...YUM!!

Ice Cream Pie

 Ice Cream Pie

**1 Cup Chocolate Wafer Crumbs
1/4 Cup Butter, Softened

1 Package Gelatin (the flavor you buy depends on what color of pie you want to make)
1/2 Cup Boiling Water
1 Pint Vanilla Ice Cream

Combine crumbs and softened butter. Mix together well. Press against bottom and sides of an 8 inch pie plate. Empty gelatin into a bowl. Add boiling water and stir to dissolve. Stir in the ice cream a few spoonfuls at a time, beating vigorously as it thickens. Put the mixture into the crumb crust pie plate and chill until serving time.

**You can also buy the chocolate crumb crust already made in the baking aisle of your store to save time.


Here's a slice of the pie. I made 4 of them yesterday and had a slice last night. Yumm!!
 

If making this for St. Patrick's Day like I do you can also make chocolate shamrocks to put on each piece. Here is the recipe to make those:

 

Chocolate Shamrocks

Melt 4 ounces of semisweet chocolate chips over hot water. (Like a double boiler). After chocolate is all melted spread evenly onto a sheet of wax paper. Let cool until firm. Press a lightly oiled shamrock shaped cookie cutter sharply into the chocolate. Leave the shamrocks on the wax paper and refrigerate until ready to use.

 

 

Over the past several years for St. Patrick's Day...our family always celebrates it in a different type of way. We have a "Progressive Dinner". You might wonder what that is...so I will explain how it works.

I have 2 sisters and my mom. We start at one of our houses. For an example:

We go to my sister, Karen and her families home first. She will serve snacks. Like vegetable tray, chips, dips etc.

Next we go to my Mom's for salad. Then we all load up and head to my sister Melodie's for the main meal. She usually makes Corned Beef and Cabbage and Homemade Mashed Potatoes. We then will usually end at my place for my Ice Cream Pie that I make with lime Jell-O so the pie is green. Each home we will sit and visit for a bit before heading to the next house. This allows our stomachs to digest a bit and be ready for the next meal. It is a lot of fun and have done it with other holidays also.

We won't be doing it this year though since my mom has lung cancer surgery the day before St. Patrick's Day. I would appreciate your prayers for her.

Tater Tot Casserole

 Tater Tot Casserole

2 Cans French Style Green Beans
Package of Tater Tots
1 Pound Hamburger
Large Can of Cream of Mushroom Soup
1 Cup Milk
1 Can of French Fried Onions  (Optional)

Brown burger and drain. Place into a casserole dish.  Put the green beans on top of the burger, then the tater tots. Empty the cream of mushroom soup into a bowl and add the milk Mix the 2 together and then pour over the top of the other ingredients. Before putting into the oven put the french fried onions if you decide to use them.

Bake for 40 minutes at 350 degrees.
 

This is another family favorite...and it is very quick and simple to make. In fact I made it the night I posted this recipe!

Fettuccine Alfredo

 Fettuccine Alfredo
From the Kitchen of Linda Snyder
 

18 ounces fettuccine noodles
3 cups half and half (you can use heavy cream...aka whip cream...also)
2 cubes butter
2 cups grated Parmesan Cheese
Couple of Pinches of Salt and Pepper

Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally. Drain.

Stir the cream and the butter in a heavy large skillet to blend. Cook over medium heat just until the butter melts, stirring occasionally. Remove from the heat.

Add the pasta and stir. Add the Parmesan Cheese to the cream sauce and Pasta. Add the salt and pepper. Stir the Pasta mixture over low heat until the sauce thickens slightly.

You can also add many things to this. Such as chicken, shrimp, peas, broccoli etc. Or serve them along side. Your imagination is endless with this dish.

This is one of my families favorite dishes and it is very quick and simple to make. BUT, full of calories LOL

Pumpkin Bread

 Pumpkin Bread
From the Kitchen of Linda Snyder
 

1 Cup Pumpkin
1 1/2 Cups Sugar
2 Eggs
1/2 Cup Vegetable Oil
2 Tablespoons Water
1 3/4 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Salt
1/2 Teaspoon Baking Powder
1/4 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
1/2 Teaspoon Allspice

Optional - 1/2 Cup plumped* Raisins

Combine all ingredients. Mix well. Pour into a well greased loaf pan. Bake at 350 degrees for 50 minutes or until a toothpick inserted comes out clean.

This bread is so good!! My kids love it.

* To plump raisins place them into small pan of boiling water for about 5-7 minutes. Drain.

Cabbage Rolls

 Cabbage Rolls

(Either you like them or you don't!  When I make these the kids remove the cabbage and give it to me, but they love the rest of the recipe!)

This is another very versatile recipe. You can make more or less, depending on how many you are feeding. I generally will double the recipe since leftovers of these are wonderful!!

 

1 1/2 Pounds Hamburger (turkey or sausage can be substituted or half and half)
2 teaspoons Salt
1/2 teaspoon Pepper
1 8 Ounce Can Tomato Sauce
1 Cup Cooked Rice
1/4 Cup Chopped Onion
1 Egg (beaten)

1 Head of Cabbage
3-4 Sliced Carrots (Optional)

Brown the burger. Add the rest of the above ingredients to the browned burger (except the cabbage)

In a separate pan...fill about half way with water and bring to a boil and add a pinch or 2 of salt. Slowly start adding cabbage leaves to the boiling water. Boil for a short amount of time. (Like a minute)

Place the sliced carrots to the bottom of a greased/buttered baking dish. Drain the cabbage leaves and start adding the meat mixture to the cabbage leaves. Roll each leaf like a burrito. Place each roll into a buttered baking dish on top of the sliced carrots (you don't need to use the carrots...it just adds more flavor)  If you have any extra cabbage leaves, place them on top of the rolls.

Sauce:

2 8 Ounce Cans of Tomato Sauce
2 Tablespoons of Brown Sugar
1/4 Cup Water
1 Tablespoon of Lemon Juice

Mix together the sauce ingredients. Pour over the top of the cabbage rolls.

Bake for about an hour at 350 degrees.

I like to make homemade mashed potatoes with butter when I make my cabbage rolls. A real German dinner!
