Sugar Free Recipe

Diabetic Apple Raisin Cookies

1 cup raisins
1/3 cup dates
1/2 cup chopped apples
3/4 cup chopped nuts
1 cup water
1/2 cup vegetable shortening
2 well beaten eggs or egg substitute
2 1/2 tsp. liquid sweetener
1 cup flour
1 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder

Soak raisins and dates for 1 hour or longer. Boil raisins, dates and apples for 3 minutes, add shortening to melt, cool and add remaining ingredients with nuts last. Refrigerate until well chilled.

Drop by teaspoons onto cookie sheet. Bake at 350ºF. for 10 to 12 minutes.

    Yummy hun sounds so wonderful. Thanks s o so much for posting these hun. I am saving them for sure. My dad and my brother and I are diabetics. I am sure we can use some of these. Question for you hun. Have you ever tried splenda? That is some wonderful stuff there and don't cause any brain cancer and all of that like the other does. Its made out of sugar but its made for us diabetics. Any way I wanted to give it a plug while we were on the subject of sweets. Thanks again hun, Hugs, Ruth
