HEAVENLY SLOW COOKER BEEF STROGANOFF
(4 Servings @ 8 points each and worth every one) 1 (1-pound) top round steak 1 8-oz. package presliced fresh mushrooms 1 cup chopped onion 1 TBSP dried parsley flakes 2 TBSP Dijon mustard 3/4 tsp. salt 1/2 tsp. dried dill 1/2 tsp. pepper 3 garlic cloves, minced 1/3 cup all-pupose flour 1 cup beef broth 1 8 oz. container 50%less fat sour cream 2 cups hot cooked noodles (cooked without salt or fat). 1. Trim fat from steak, cut steak diagonally across grain into 1/4 inch thick slices. Place steak, mushrooms and everything but flour, broth, sour cream and noodles in crock pot. Stir well. 2. Place flour in a small bowl; gradually add broth, stirring with a whisk until well blended. Add to crock pot ingredients and stir well. Cover. Cook on high 1 hour. Reduce to low and cook 7-8 hours. (Or on High for 4 hours). 3. Stir in sour cream and serve over stroganoff noodles.

Christmas Recipes

CHRISTMAS BROCCOLI (0- pts.) Steam 1 cup of broccoli and cauliflower until barely tender. Marinate in Walden Farms 0-pt. Italian dressing. Toss with thinly sliced red bell pepper. BEAUTIFUL AND DELICIOUS!!!
ITALIAN TORTELLIN SOUP -- (A beautiful and delicious supper that refrigerates and makes GREAT LEFTOVERS for busy December days) Makes eight 1 1/2 cup servings at 3 pts. each
1 cup coarsely chopped onion 2 garlic cloves 1 Tbsp. olive oil 5 cups beef broth 1/2 cup water 2 cups chopped tomatoes (or 1 large can stewed low-sodium) 1 cup thinly sliced carrots 1/2 tsp. basil 1/2 tsp. oregano 1 8 oz. can tomato sauce 1 1/2 cup sliced zucchini 2 cups frozen cheese filled tortellini 3 Tbsp. fresh parsley 1 medium green pepper, chopped into 1/2 inch pieces.
Saute onion and garlic until tender in olive oil. Add beef broth, water, tomatoes, carrots, seasonings and tomato sauce. Bring to a boil. Reduce heat and simmer for 30 minutes. Stir in tortellini, zucchini and green pepper. Simmer an additional 30 minutes.

Chicken Rice Dinner
CHICKEN AND RICE SKILLET DINNER -- 4 SERVINGS @ 6 POINTS each
One 1-oz. envelope onion soup mix, divided 4 4-oz skinless, boneles chicken breast halves PAM 1 1/2 cups water 1 (10 3/4 oz.) can reduced-fat, reduced sodium cream of mushroom soup, undiluted 1/8 tsp. pepper 1 1/2 cups uncooked instant rice.
1. Sprinkle half of onion soup mix over both sides of chicken breast halves; coat chicken lightly with cooking spray. Place a large nonstick skillet over medium-high heat until hot. Add chicken; cook 3 minutes on each side or until chicken is browned. Remove chicken and set aside.
2. Add remaining onion soup mix, water, mushroom soup and pepper to pan; bring to a boil. Stir in rice. Top with chicken. Cover, reduce heat to low, and cook 8 minutes, or until chicken is done. ~~Serve with a big salad or lots of steamed veggies! ~*~MORE THANKSGIVING RECIPES~*~ PARMESAN DINNER ROLLS - 3 points each. THESE ARE SHOW STOPPERS FOR COMPANY IF YOU LET THEM RISE LONG ENOUGH!!!! Use 1 bag of frozen roll dough. Spray muffin tin with PAM. Place 2 roll balls in each cup (I like to cut them in half so I have 4 pieces for a cloverleaf roll) Spray tops lightly with Pam and sprinkle generously with Parmesan cheese (sesame seeds are fun too.) Let rise -- I allow at least 2 1/2 - 3 hours and let them get very large) Bake at 375 for 8-10 minutes.
ONION TOASTED GREEN BEANS About 6 servings @ 2 points each Mix 1 can Cream of Mushroom (98% fat free) with 1/2 cup skim milk, 1 tsp. soy sauce, dash pepper and 4 cups cooked green beans. Top with 1 cup crushed onion melba toast crackers.

Thanksgiving Recipes
GINNIE'S CRANBERRY APPLE CRISP 4 servings @ 3 points
1/2 cup rolled oats 4 TBSP brown sugar 1 TBSP. flour 4 TSP. low-cal margarine 6 apples, cored and sliced 1 CUP frozen cranberries 1 TBSP lemon juice 1/4 tsp. cinnamon 1/8 tsp. nutmeg
Preheat oven to 375. Combine oats, sugar (reserve a bit of the sugar) and flour. Work in margarine until mixture is crumbly. Combine apples, cranberries, remaining brown sugar, lemon juice, cinnamon and nutmeg. Spoon in 8" squar pan. Srinkle with oats mixture. CRANBERRY SWEET POTATO QUICK BREAD 16 Servings @ 3 pts. each
21/2 cups flour 1 cup firmly packed brown sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. ground cinnamon 1/4 tsp. ground nutment 1/4 cup canned, unsweetened mashed sweet potato 3/4 cups egg substitute 1/3 cup orange juice 1/4 cup margarine 1 cup chopped cranberries 2 tbsp. sliced almonds.
Preheat oven to 350. Combine dry ingredients. Make a well in the center. In separate bowl, combine sweet potato, eggs, o.j. and margarine. Add dry ingredients to wet. Stir juntil just moist. Fold in cranberries. Coat 9x 5 loaf pan with cooking spray. Spoon batter into pan and sprinkle with almonds. Bake 1 hour and 10 minutes or until toothpick comes out clean.
ZUCCHINI & TOMATOES -- 6 servings @ 1 point each
Slice 3 large zucchini. Spray frying pan with cooking spray. Lightly saute zucchini until barely tender. DO NOT OVERCOOK! Pour 1 can "Fresh Cut Tomatoes with onion and garlic" into separate sace pan. Gently simmer to heat and reduce liquid. Add 3 TBSP of jelly (mint or raspberry is best). Add zucchini and heat until jelly is melted.
SKINNY MASHED POTATOES 1 cup = 3 points OMIT BUTTER AND CREAM from your mashed poatoes and cut your points in half! Use Yukon Gold Potatoes for a butter color. Cook potatoes in Swanson chicken broth as directed on can until fork tender. Mash and serve. They will be golden! Sprkinle top of potatoes with Butter Buds or Buttery Spray and little fresh chives and parsley.

CAULIFLOWER WITH CHEDDAR SAUCE
-- 4 servings @ 2 points each:
1/4 cup light mayonnaise 1/4 cup (1 oz.) preshredded reduced-fat sharp Cheddar cheese 2 Tbsp. chopped green onion 2 tsp. Dijon mustard 1 (2-pound) head cauliflower Coarsely ground black pepper (optional)
1. Preheat oven to 350. 2. Combine first 4 ingredients in a small bowl, stir well and set aside. 3. Remove large outer leaves of calliflower. Break into large florets. Steam cauliflower, covered, 8 minutes or until crisp-tender; drain. Arrange florets in an 8-inch square baking dish and top with mayo mixture. Bake for 7 minutes or until cheese melts. Sprinkle with pepper if desired.

4 POINT TOOTIE-FROOTIE SMOOTHIE: Whip in the blender 1/2 of 1 frozen banana (about 3 inches) 1/2 cup frozen crushed pineapple (I divide a can into an ice cube tray to make cubes) and 1 TBSP SMUCKER'S LITE SUGAR JAM blended with 1 CUP skim milk.

CAROLYN'S COULDN'T LIVE WITHOUT IT HOT COCOA: 2 Points
1 cup skim milk heated for 2 minutes in the microwave. Add 1 heaping tsp. Hershey's Baking Cocoa Powder and 3 Sweet 'n Lows. or Equals. For another point -- add some COOL WHIP or marshmallows.

Macaroni & Cheese
HERE IS COMFORT FOOD FOR A GRAY AND DRIZZLY DAY writes Carolyn:
4 SERVINGS at 7 points each (and worth it!)
Cooking spray 3/4 cup finely chopped onion 3/4 cup finely chopped green bell pepper 3 1/2 cups hot cooked elbow macaroni (1 1/2 cups uncooked) 1 TBSP flour 1/2 tsp. dry mustard Salt and Pepper 1/8 tsp. ground red pepper 1 1/2 cups 1% milk 1 cup (4 oz.) shredded reduced-fat cheddar cheese 2 oz. processed cheese (like Velveeta) 1 2 oz. jar diced pimento
1. COAT a large nonstick skillet with PAM and heat. Add onion and bell pepper, saute for 5 minutes or until tender. Place onion mixture and macaroni in slow cooker sprayed with cooking spray.
2. Place flour and next four ingredients in a small bowl. gradually add milk, stirring with a whisk until well blended. Add milk mixture, cheese and pimento to slow cooker and stir well. cover with lid; cook on high for 1 1/2 hour or until thick and creamy, stirring after 1 hour.
