Gonna be an all-nighter

Cranky

It's 11:35 pm and people are still setting off their fire crackers.   I think it is gonna be an all night affair. It amazes me how many people buy their own fireworks...and they aren't cheap either.   I have no interest in spending a lot of money on something I am going to set fire too.

Princess our Chihuahua is going nuts...poor pup!

Snap! Crackle! Fizz! Boom!

Relaxed

It's July 1st and I have been hearing fire crackers for days now!  You know people setting them off in their backyard.  The local stands were set up last month and I imagine it will only get worse right up to the 4th and then hopefully fizzle out.

This got me to thinking , do you say fire crackers or fire works?  Let's take a poll.

Praying the days go  by quickly...

Mellow

Daddy and his girl.  Michael has been picking up Gabby and holding her in this same kind of photo for years.  It is a traditional deployment photo now...only I can clearly see he won't be able to pick her up too much longer.  Boy she is growing up fast.

What is fart football???

I'll tell you this about it...HUBBY was the one to tell me what it was and that is not what I keep the notebook for.   I get ideas in the middle of the night for greeting card ideas!!!!  Now read below for the fart football joke...and thanks for playing.

A little old couple prepares to go to bed. They no sooner hit the pillows when the old man farts and says, "Seven Points."

His wife rolls over and says, "What in the world was that?"

The old man replied, "It's fart football."

A few minutes later his wife lets one go and says, "Touchdown, tie score."

After about five minutes the old man lets another one go and says, "Aha. I'm ahead 14 to 7."

Not to be outdone, the wife rips out another one and says, "Touchdown, tie score."

Five seconds go by and she lets out a little squeaker and says, "Field goal, I lead 17 to 14."

Now the pressure is on the old man. He refuses to get beat by a woman, so he strains real hard, but to no avail. Realizing a defeat is totally unacceptable he gives it everything he's got, and accidentally he shits in the bed. The wife says, "What the hell was that?"

The old man says, "Half time, switch sides."

I keep a notebook near my bedside with a pen and flashlight.  What for might you ask?  Well I could tell you but that wouldn't be any fun so how about a poll and you can guess!!!

In a pickle...

Mellow

Gabby and I put on our aprons today and pickled some of our "home grown right from our balcony garden" banana peppers!!  We had about 35 peppers to work with and when we first filled the jars they were jam packed!  After adding the brine and setting them in the water bath they shrunk up.  I hope once the cool they will swell back up.  Two jars we did with whole peppers and two we did with sliced peppers.

Almost that time again...

Bummed

Michael's next deployment is looming over us.  Sigh...it will be a short one (2 months) but any time we are a part is icky.  I get to be Mom and Dad for awhile, in charge of everything...bills, cars, house hold stuff, etc...  Michael does a great job taking care of his girls and I am sure used to it.  It won't kill me to be the independent one I am just more comfy with him looking after all those important things.

I worry a little bit about him leaving so soon after my surgery.  And the fact that we are also saying goodbye to two other families this summers sucks as well. I would love to pack up and go home to AZ for two months but when I look at their temps lately that scares me...HOT HOT HOT!   And they thought I was gonna be hot in Florida?  Their 110 days are way worse then my 80 degree days lately.

So I guess Gabby and I will stay put, try our hand at some canning (have a ton more peppers and I want to make some pickles too), hit the beach and the pool and send a lot of care packages to our Michael.

The rain came down, down, down, down!

Silly

When you leave your truck parked outside and it rains a lot...do you know what happens?  I'll tell you, you get one of three things...a very small swimming pool, an outdoor bathtub or a hot tub with no jets!!!

Michael had already started to move the truck when I saw half of it splash out the tail...I said STOP I need a picture.  So while this looks like a lot there was even MORE water in the back.

Low carb mash potatoes?

Fabulous | Thunder outside...

I think I mentioned that I am on a low carb, high protein diet.  I shouldn't say diet cause I am really going to try and do this from now on.  I've been craving mash potatoes and you know that is NOT low carb.  My friend mentioned she makes mash potatoes using Cauliflower.  My first thought was ick!  But while doing research online I have read many reviews and people really like it.  So I thought...what the heck I will try it.  The results were fantastic!

Now, nothing really tastes as good as real mash potatoes but I think this is a fantastic substitute.  Below is the South Beach Diet recipe...it is the one my friend uses.  I made up my own recipe.   Since I need to get protein in I added cheese and my diet does not restrict my fat intake...I won't go over board but I can have it so I also added butter.

My version included, garlic, butter, lite laughing cow cheese, parmesan cheese, pepper jack cheese (for some spice), cream cheese and some skim milk.  I know that sounds like a lot of cheese but I really used very little and the milk was just a splash. Gabby LOVED it.  I think Michael would like them if he didn't know what it was.  I also think a good trick is to not over mix it all or to set aside some smaller pieces of cauliflower to add after you are done mixing...this gives you those chunks that make it feel more like real homemade mash potatoes.

South Beach Diet INGREDIENTS
  • 4 cups cauliflower florets
  • 1 ounce butter flavored cooking spray
  • 1 fluid ounce fat-free half-and-half
  • Pinch salt
  • Pinch freshly ground black pepper
DIRECTIONS
  1. Steam or microwave the cauliflower until soft. Puree in a food processor, adding the butter spray and the half-and-half to taste. Season with salt and pepper.

* I just noticed the jar of EASTER candy on the counter behind the mixer.  LOL...how bad is that?
