Egg Rolls

It wasn't Mom can you make 24 cupcakes for my class party, a dozen cookies for the bake sale...NO, it was Mom, can you make 30 egg rolls for my book report project.  Oh and maybe a few extra for my favorite teachers!  UGH!

Gabby needs to me to make 30 something egg rolls for tomorrow. We went to the local Asian market this weekend to pick up a few essentials and a few treats.  Got a fancy red platter to take the egg rolls on, some Japanese candy to hand out (as if the egg rolls weren't enough) some spices, chopsticks and Japanese soda.

I could make the egg rolls tonight but then they won't be as good tomorrow...so you know what that means.  I will be up at the crack of dawn wrapping and frying.  Actually I think I will let Gabby wrap them tonight and I will fry them in the morning.  I have a great egg roll recipe and have the mistake of bragging about how good they are...now everyone wants them.

Wish me luck!  Oh and if you look at the poster board you will see some fortune cookies in the lower right corner.  It is so cute...we broke one open and made a fortune sticking out that reads "You will give Gabby and "A" on this project."  LOL

    Wow, egg rolls! That is a tall order. Up until I read your recipe I wouldnt have had a clue how to make them. I like the snuck in fortune. ;) I bet she DID get an A! Kelly

    Loved your journal! Hope Gabby gets her "A" and Mom should get one too! Seems that we moms have to always exert twice the energy into the schooling of our young ones than even the young ones themselves! I remember those days...We've been through 9 teens and are on the last one now...My youngest son just turned 13! I must say, the girls were more of a strain on my health and wefare than the boys...But I speak from 1st hand knowledge...None of it is easy. After all Parenting isn't for sissys is it? Love2U Sharon
