35 egg rolls out the door!

 

Whew!  What a morning...the egg rolls are off and on their way to school.  We car pool and this was my week off so she is in the hands of a friend.  I hope she gets some help carrying it all.

Here is the recipe you requested and as far as low carb...that is too funny cause I was wondering the same thing as I was making them.  I believe they are relatively low carb.  I used "lumpia" wrappers cause that is all the store had and they had 4  carbs (I forgot to see for how many but you can check if you buy them) and then there is chicken low carb, green onion, cabbage, soy sauce, ginger and garlic...all pretty low carb stuff.  Gee I practically gave you the recipe.

Mama-San Robin's Egg Rolls

4 cups coleslaw mix

8 oz. deli roasted chicken breast shredded (2 cups)

1/2 cup sliced green onion

3 cups soy sauce

3/4 tsp ground ginger

1/2 tsp garlic powder

1 (16 oz) egg roll wrappers

oil for frying

 

Mix all ingredients above. Spoon about 1/3 cup of the mixture on each egg roll wrapper and follow wrapping instructions on package.  Fry egg rolls in about 2 inches of oil for 2-3 mins or until brown.  To keep warm before serving put egg rolls in the oven set at 300 degrees until all are done and ready to serve.  Yummy!!

Oh and for the chicken I just buy a rotisserie chicken and shred that to use.

 
p.s. I forgot to take pics...I was up last night til 3 am barfing!  Yea!  I have no idea why but suddenly I was sick and in the bathroom throwing up all night...so this morning I was running on empty and spaced taking pics.  Now it is back to bed for a nap.

Egg Rolls

It wasn't Mom can you make 24 cupcakes for my class party, a dozen cookies for the bake sale...NO, it was Mom, can you make 30 egg rolls for my book report project.  Oh and maybe a few extra for my favorite teachers!  UGH!

Gabby needs to me to make 30 something egg rolls for tomorrow. We went to the local Asian market this weekend to pick up a few essentials and a few treats.  Got a fancy red platter to take the egg rolls on, some Japanese candy to hand out (as if the egg rolls weren't enough) some spices, chopsticks and Japanese soda.

I could make the egg rolls tonight but then they won't be as good tomorrow...so you know what that means.  I will be up at the crack of dawn wrapping and frying.  Actually I think I will let Gabby wrap them tonight and I will fry them in the morning.  I have a great egg roll recipe and have the mistake of bragging about how good they are...now everyone wants them.

Wish me luck!  Oh and if you look at the poster board you will see some fortune cookies in the lower right corner.  It is so cute...we broke one open and made a fortune sticking out that reads "You will give Gabby and "A" on this project."  LOL

Empty nest...

 

LOL.  I don't really have an empty nest but now that the frog babies and the egg babies are gone I feel I need something else to care for.  So....Gabby and I went and bought some baby veggies.  :)

A Banana Pepper tree, a tomato plant and two strawberry plants.  The pepper tree already had several good size peppers on it that were ready for picking!  The tomato plant has some little green toms that will be ready one day but not yet...and the strawberries are still in hiding.

It was fun picking them out.  I cannot wait to see some goodies on our plants! Any tips on caring for these guys?

Freedom!

 

We let the frogs go.  One died yesterday and I feared they weren't eating enough things that frogs should eat...bugs, flies, etc..

So Gabby and I decided to set them free today.  We spotted a nice marshy like area in the pond that looked like a safe place.  The water level in the pond has been very low so it made for a nice sandy beach like area where we could stand and let them go.

As we got out there it looked like the sand and grass were moving...a closer look showed us there were MILLIONS of little frogs just like ours!  Who knew we would pick such a great spot.  We also noticed some baby um...bird things.  Not sure what they are called, I will look them up.  I took a few pictures...they practically ran right up to me when I got to the waters edge and started talking away...I think they thought I had bread crumbs. You can see a lot of muddy areas that the ducks and birds are walking on, that is normally all under water.

You can't really see much in this footage but if you look closely when I pan to the water you can see something very small jump into the water...it's one of ours!

Born to shop!

 

Took the egg babies to lunch and shopping today.  They were so well behaved I hardly knew they were with us.  That is until we got to Target...couldn't keep them in that red shopping cart for very long.  They were all over the store.  Playing with shoes, Winnie the Pooh, getting into car seats and finally resting on a cute pink chair.  Hmmmmph!  Those girls can wear you out!

First night with babies was egg-cellent!

Emma and Erica slept thru the night...at least I didn't hear a single "crack" out of them LOL.  Gabby did tell me they had a 2 am feeding.   I watched them this morning while I reading email and she got ready for school.   Didn't Gabby do a good job with the diapers?  She is using cloth diapers cause they are better for the earth.  lol

Oh and look....some cousins came over to meet our girls! (clearly they are from my side of the family with that lily white skin...er shell)

Just call me Grandma!

 

 

Yep, I am a Grandma!  Hard to believe isn't it....well that's cause I am the Grandma to two adorable eggs!  Both girls by the way...Emma and Erika and yes they are twins!

Gabby's home economics class is now teaching what it would be like if you had your own baby to care for.  Costs involved, childhood illnesses, midnight feedings, babysitters, etc.  All that fun stuff teens don't think about when it comes to having a baby.

The teacher had them all fill out adoption papers yesterday and today Gabby came home with twins!  Each child gets an egg to care for.  They must have it with tem at all times.  They can only leave it with a sitter for 3 hours or less.  They have to keep a log or journal of how they are caring for their youngster.  LOL

Most kids went home with one egg.  Gabby and two others got twins and one lucky fellow had triplets!  LOL.   I pulled out a bunch of crafty items for Gab to use when fixing up a nest/crib for her babies!  She has had a blast playing and getting it all ready.

So like any proud grandparent would do I am here to brag and post pictures of our adorable baby girls!!!  I am sure we will keep you posted as this adventure progresses.  Pray for no CRACKS!

How cute is it that she picked "brown" eggs!  (in case you didn't know...Gabby is half brown.  lol)

I think they have my big beautiful eyes....

Indiana Jones

 

 

I am so excited about the new Indiana Jones movie coming out.  I grew up on Indiana Jones...he inspired me to become an archeologist.  Okay so I never became one but I always wanted too.  I used to dream about finding treasures and getting chases by cannibals only to fall safely into Indiana's safe, strong, rugged arms.  :)   I imagine there is a little treasure hunter in all of us.

I told Gabby most of the people in the theater will probably be my age.  Come to think of it...I don't even think she has seen any of his movies.  We might need to have a Indiana Jones movie marathon here in the next week or so.  I hope it is a good one...are you going to see it?
