A Heart-stoppin' recipe for your cook-out
Dirty Bread (this is even worse for ya then it sounds)
a really good rye bread, crispy crust
a hunk of fat back
sweet onion slices
sliced tomato
sliced green peppers
hot hungarian paprika
Score the underside of the fat back and put it on a long handled fork. Set it on the grill til it starts to drip fat. The goal here is to not let the fat drippings fall into the grill. They go on the bread. If the fat bursts into flames all the better! Just blow it out and soak the bread until its black and sopping with greasey, salty goodness. Top the bread with veggies and sprinkle with paprika and eat like an open face sandwich only no fork or knife.
Hardcore fat lovers will eat the fat back after everyone is done with it. There is a Polish name for this, but I forget it. This recipe came from my grandparents and they lived into their 90's.
