Feeling Happy

ENTRY  #  FOURTEEN  HUNDRED  &  TWELVE.

Time is so precious-do not waste it.

Good Morning.

All is well in the Tennessee Valley and I hope that you can say the the same thing wherever you are. I am already sipping on this coffee and I want you to hurry on in and share it with me, that makes it a lot better. I am enjoying the change that we have made, we buy the coffee in the whole grain and then grind it just before we put it in the percolater, I enjoy doing that, my only complaint is the price of the coffee that I am useing. I think that it is a little on the high side. But it dose taste so good to me and it even makes me smile this early in the morning. And I did not forget you that want tea, it is ready.

Our weather is extra good for these tomatoes, it was near 80 again yesterday, real bright sunshine and we exect about the same again today.

Before I forget to do it I want to say thanks to so many of you that  have given me  so many comments and email in the last few days, it has been so encouraging to me, and for many of you it has been your first time and I hope that you will continue to read what little old Dad has to say. Some of you may have noticed the changes that we are making in the looks of the journal, I hope that it is making it a little easier to read and get the complete story of dad, I would appreciate any suggestions that any of you would have.

  Recipe: Parmigiana di Melanzane

By Thomas Cenci

Parmigiana di Melanzane is a classic Sicilian dish which is served on most households throughout Italy.

The combination of the tomatoes with the eggplant and two cheeses makes a mouth watering recipe and is a must for all who love to cook.

Ingredients:
• 1kg eggplant
• 4 tablespoons olive oil
• 1 bunch fresh basil leaves Read the rest of this entry »

This little poem that I like very much is going to be my thought for today.

" I've found a little remedy. To ease this life we live. And make each day a happier one . It is the word forgive.

So often little things come up. That leave a pain and sting. That covered up at once would not. Amount to anything.

"Tis when we hold them up to view. And brood and sulk and fret. They greater grow before our eyes.  'Twere better to forget."

From Apples of Gold.

SO many interesting things in your post today, Dad!  The recipe sounds wonderful (using soy cheese and other flavors, in my case).  Yes, tomatoes and eggplants together are the best, aren't they?

The coffee sounds great, and one little luxury is not too much, if you can comfortably afford it.  I know -- I'm fond of Gevalia's coffees, but have just had to put my subscription on hold in the hope of better times to come.

Today's Thought is a good one, and one I will seriously try to utilize!

May you, Ms. Mary, and the lovely Princess have a wonderful evening, and I'll check in again tomorrow.  Big PURRS to the prettiest cat in Tennessee! ^^

Good morning Dad. It's going to be a warm day here today. 84º is called for, 65º right now. I hope you enjoy this day along with Mary and Princess. Helen

Good Morning Dad, The coffee is extra good today since I am at home enjoying it slowly.  I  will be able to do that for the next week, since I am on vacation and will be leaving for Florida later today.  I hope you have a wonderful week and I will try to peek in on you once or twice while I am gone.  Linda
